Cilantro Lime Rice

Cilantro lime rice is the most versatile (and popular!) rice to serve in burritos and burrito bowls. It's easy to make and bursting with flavour from the fresh cilantro and lime juice.

Ingredients

  • 1 ¼ cups dry long grain white rice
  • 1 tsp extra-virgin olive oil
  • 1 tsp fine sea salt
  • 2 cups water
  • ½ lime, juiced
  • 2 tbsp fresh cilantro, chopped

Method

  1. In a medium pot, heat the oil. Add the rice and toast rice over medium heat for a few minutes. Don’t let it burn/brown. It will appear “whiter” as it toasts. Stir in the salt.
  2. Add 2 cups warm water (or amounts according to package instructions) and bring to a boil. Cover and reduce to a simmer for 20 minutes.
  3. Once the rice is ready, add the lime juice and cilantro. Fluff, then set aside until ready to serve.
