There are so many ways to cook a whole chicken, but my favourite (aside from rotisserie) is to use the Traeger. This smoked whole chicken doesn’t need any special prep like brining, salting/drying, or basting. All you need is a delicious herb rub and optionally stuffed with fresh herbs. With this recipe (and a 3 lb raw whole chicken), you can have dinner for 4 on the table in just 1.5 hours.
This is a recipe I truly only make in the summer. There’s just something extra special about cooking Mexican rice with veggies entirely from your garden. Their own incredible flavours shine here, and the tomato, cilantro, jalapeno addition gives it just enough kick to make it pair incredibly with tacos, enchiladas and more!
I came across a random recipe using apricot jam as a marinade/glaze for chicken and I was absolutely sold! I always have an abundance of apricots each year because of our fruit trees and I never eat jam on its own. Enter Ginger Apricot Chicken …
This broccoli kale salad pairs some less popular vegetables with cheese, nuts, dried fruit, and a delicious lemon vinaigrette to make an irresistable combination that will be devoured. In my opinion, it’s the best kale salad!
This quick and delicious garlic scape arrabbiata uses the scape from hardneck garlic that is harvested in late May-mid June. The delicate garlic flavours hold up well to the 15 minute simmer with the grape tomatoes and the result is a rich yet delicately flavoured pasta sauce that will have you sneaking back for seconds! A touch of spice is added from the calabrian chili peppers and fresh thyme to round out all the flavours.
These Maple Dijon Soy Chicken Thighs are one of our favourite summer mains! This recipe has been on repeat so many times in our house, we have the method perfected. A nice long marination period with simple ingredients yields these incredibly delicious, richly flavoured, and lightly smoky chicken thighs that pair with almost anything!
Chettinad Chicken Curry is a deeply flavourful, spicy curry from the Chettinad Region of Tamil Nadu, India. This rich curry uses a freshly ground masala to showcase the incredible flavours.
This Shrimp Pesto Pasta recipe is one of those meals I forget exists because it’s almost too easy. In under 20 minutes you can have a delicious, impressive pasta dish on the table. It’s even tasty cold as a pasta salad! Using store-bought or previously made homemade pesto makes this recipe a breeze.
